Recipe: Chickpea Sandwich

This Chickpea Sandwich is a bomb loaded with flavor, protein and fiber.

Ingredients:

  • BreadVillage German Multi-Seed Bread (6g protein, 4g fiber per slice0
  • Canned chickpeas, rinsed and drained (tons of protein!)
  • Mayo
  • Onion, diced
  • Tomato, diced
  • Avocado, sliced
  • Leafy greens
  • Onion powder, garlic powder
  • Salt and pepper
  • Bean sprouts

Directions:

  1. Add drained and rinsed chickpeas to a mixing bowl and mash with a fork
  2. Add mayo, garlic powder, onion powder, salt, pepper and mix with a spoon. Taste and adjust seasonings as needed.

Toast bread (if desired) and layer the chickpea mix, onions, tomatoes, avocado and leafy greens between two slices of Multi-seed bread.
